Does Whole Corn Go Bad?

Whole corn, when properly dried and stored, can last for several years without going bad. This is because it's dried to under 14% moisture before being bagged, which inhibits the growth of mold and bacteria. However, if whole corn gets exposed to moisture, it can quickly spoil and become soft, mushy, and moldy.

Here are some signs that whole corn has gone bad:

  • Soft or mushy kernels: This is a sign that the corn has absorbed moisture and is starting to rot.
  • Dried-out husk and fully browned tassel: This indicates that the corn has been exposed to too much heat and has dried out.
  • Withered or dry kernels: These kernels are no longer fresh and will not pop properly.

It's important to note that fresh corn, which is still on the cob and not dried, will spoil much faster than dried corn. Fresh corn can last for a few days in the fridge, but it's best to use it as soon as possible after harvesting.

If you are unsure whether or not your whole corn is still good, it's best to err on the side of caution and throw it away.
