As long as your expired almonds don't smell rancid, they are generally safe to eat.

Assessing Expired Almonds

The primary concern with expired almonds is rancidity. The oils in nuts can go bad over time, leading to an unpleasant smell and taste. Here's how to assess your almonds:

  • Smell: This is the most important indicator. If the almonds smell sour, bitter, or like old paint thinner, they are rancid and should be discarded.
  • Taste: If they smell okay, try a small piece. A rancid taste will be immediately apparent.
  • Appearance: While less reliable, visibly shriveled, overly dry, or discolored almonds may indicate spoilage.

If the Almonds are Not Rancid:

If your almonds pass the smell and taste tests, they are likely safe to consume, even if they are past their expiration date. Here's what you can do with them:

  • Eat them as is: They might be a bit drier or less flavorful than fresh almonds, but still perfectly edible.
  • Roast them: Roasting can help restore some of their crispness and flavor. Spread the almonds in a single layer on a baking sheet and roast at 350°F (175°C) for 5-10 minutes, or until fragrant and lightly toasted. Watch them carefully to prevent burning.
  • Use them in baking: Incorporate them into baked goods like cookies, muffins, or breads. The other ingredients will often mask any slight staleness.
  • Make almond flour/meal: If you have whole almonds, you can grind them into almond flour or meal using a food processor. This is great for gluten-free baking.
  • Add them to trail mix or granola: Their slightly diminished quality will be less noticeable when combined with other ingredients.
  • Use in cooking: Add to stir-fries, salads, or other savory dishes for added texture.
  • Make almond butter: While not ideal for perfect almond butter, if you are looking to use the almonds this is an option.

If the Almonds Are Rancid:

Rancid almonds should be discarded. Eating rancid nuts can cause digestive upset and isn't worth the risk.

  • Compost (Maybe): If you compost, rancid almonds can go into your compost bin, but only if your bin is well-managed and avoids attracting pests with oily foods.

Ground Almonds/Almond Meal

Since your ground almonds aren't that old and have been stored in a dry place, you can likely use them without issue, provided they pass the smell and taste tests for rancidity.
