While the round, fleshy beet that we eat develops near the surface, the plant sends down a significant taproot. This allows it to access water and nutrients deep within the soil profile. Therefore, when growing beets, it's important to ensure they have well-drained soil and are not planted in areas where tree roots will compete for resources. Deeper soil promotes optimal beet growth.
