The Evolution of Teflon: From PFOA to PTFE

The primary reason Teflon-coated products remain on the market is a significant shift in their chemical composition. Older non-stick coatings sometimes used perfluorooctanoic acid (PFOA) as a processing aid. Concerns about the potential health effects of PFOA led to its phasing out and eventual ban in the U.S. in 2013.

Modern Teflon products, however, utilize polytetrafluoroethylene (PTFE). This material provides similar non-stick properties without the same health risks associated with PFOA, making it safe for general consumer use when applied correctly.

Key Differences Between Old and New Non-Stick Coatings

To better understand why modern Teflon is considered safe and legal, it's helpful to compare the two main components:

Even with the safer PTFE formulation, proper care and usage of non-stick cookware are essential to maintain its integrity and ensure safety:

  • Avoid Overheating: Do not heat empty non-stick pans to very high temperatures (above 500°F / 260°C). Overheating can cause the coating to degrade and potentially release fumes, which, while generally not harmful to humans, can cause flu-like symptoms in some individuals.
  • Use Low to Medium Heat: For most cooking tasks, low to medium heat is sufficient for non-stick pans.
  • Ventilate Your Kitchen: Always ensure good ventilation in your kitchen, especially when cooking at higher temperatures.
  • Avoid Metal Utensils: Use wooden, silicone, or plastic utensils to prevent scratching the non-stick surface, which can lead to flaking.
  • Hand Wash: Gently hand wash non-stick pans with soap and water rather than using abrasive scrubbers or harsh dishwashers.
  • Replace Damaged Pans: If your non-stick coating is heavily scratched, flaking, or peeling, it's best to replace the pan.

By understanding the distinction between older PFOA-based processes and modern PTFE-based coatings, and by following safe cooking practices, consumers can confidently use Teflon products.
