  • Slice for Speed: For faster water removal, slice the block of tofu into your desired thickness (e.g., 1/2-inch or 1-inch slabs). More surface area directly translates to quicker drying.
  • Layer with Absorbency:
    • Lay a clean kitchen towel or several layers of paper towels flat on a cutting board, baking sheet, or a clean, sturdy surface.
    • Arrange the sliced tofu pieces in a single layer on top of the towels, ensuring they don't overlap.
  • Apply Pressure:
    • Place more paper towels or another clean kitchen towel on top of the tofu slices.
    • Apply gentle, yet firm, pressure by hand.
    • For more consistent and thorough drying, place a flat, heavy object (like a cast-iron skillet, a stack of cookbooks, or another cutting board) on top of the upper layer of towels.
  • Time & Repeat: Let the tofu press for at least 30 minutes, or up to an hour for very firm results. You may need to replace the saturated towels with dry ones midway through the process if a lot of water is extracted.

2. Using a Tofu Press (Dedicated Tool)

For those who regularly cook with tofu, a dedicated tofu press is a worthwhile investment. These devices are designed to apply consistent and even pressure, making the drying process effortless and highly efficient. Simply place the tofu block into the press and follow the manufacturer's instructions, typically allowing it to press for 15-60 minutes.

  • Extra-Firm Tofu: Start with extra-firm or super-firm tofu varieties, as they inherently contain less water and require less pressing time.
  • Change Towels: If using paper or kitchen towels, don't hesitate to replace them with dry ones once they become saturated. This ensures continuous water absorption.
  • Patience is Key: While slicing helps speed up the process, allow adequate time for the water to be fully expelled. Rushing this step will result in less crispy or less flavorful tofu.
  • Post-Pressing: After pressing, you can pat the tofu dry one last time with fresh towels to ensure no residual moisture.
